Banana Pudding Recipe

Happy Monday everyone! Thanksgiving has come and gone! We had a wonderful holiday and hope you all did too. It really has been a while since I posted a recipe. If you don't know already, I am from the south, South Carolina and we love our banana pudding. It is pretty much a staple for any southern get together. And the good thing about banana pudding, it can be a summer dessert dish or a winter dessert dish. Every single time I make it, you better believe there will be none for left overs. You will find people fighting over it, trying to stash some in a dish to take home before some one see them, etc.

I prepared our ENTIRE meal of Turkey, collard greens, green beans, rice, mac and cheese, stuffing, turkey gravy as well as sweet potato casserole, apple pie and BANANA PUDDING - a true southern Thanksgiving!! I had to work the day before and return to work the day after. You can believe that I crashed Friday afternoon!
It really has been a while since I posted a recipe. So even though Thanksgiving is over, this can be enjoyed at any time between now and Christmas! I hope you have a wonderful Monday.

Southern Banana Pudding

1 box of NILLa wafers
1 pkg (5.1 oz) JELL-O vanilla pudding mix
1 pkg (3.4 oz) JELL-O french vanilla pudding
2- 4 bananas (depending on how much you like bananas in your food)
3 1/2 cups of milk
one tub of COOL WHIP

Beat milk and pudding mix with a whisk for 2 minutes
Mix in 1/3 cup of  the cool whip and let stand.
Cover the bottom of an 8x8 inch (2 qt) dish with NILLA wafers.
Top with a thin layer of pudding, then smooth, making sure to cover cookies.
Top that layer with bananas, then pudding again. Repeat starting with cookies.
After the layers are complete, cover with a layer of COOL WHIP (I whip mine up a little before spreading)
Put a few cookies in a ziplock bag (or food processor) and smash/chop.
Sprinkle the crumbled cookies on top to finish off.

What's been keeping me......

Hey guys. So sorry about the lack of posts. I have been busy trying to finish planning the Fairy Garden party for my friend's daughter and designing the party stationary/decor. I am also baking and decorating treats for the party.

Here is what I have been working on:

The inspiration for this invitation came from the colors in this little dress from Old Navy.

For the fairy party, hopefully I will have lots more details next week along with a flower cupcake stand that I am designing. I am also hoping to create a tutorial for the cupcake stand.
Note to self for cupcake stand: take pictures as you go along, take pictures as you go along...........

October's Leftovers

Well as we all can see we are in the 2nd week of November - ALREADY! This month will have come and gone before we know it. Then, it will be December! Since I wasn't able to get online the week after Halloween, I wanted to share some photos from class gifts, to my nephew's class treat bags, etc.

I made these labels for my nephew's class. Each child had their own name on their bag with lots of goodies inside.

I used my Spooky Bash kids collection to create these. One for the boys and one for he girls.

Here shown with the water bottle labels. Love the cute mini bottles that my sister found.

A special bag my sister made just for Constance.

Mini treat bags and Marshmallow pops, I made for my class. The original plan was to put labels on the fronts of these, but when I went to print, the ink was EXTREMELY low and did not print the right colors. Go figure!

My Clemson (tiger) Fairy! I guess she did spread some luck to those tigers because they sure did win their next game the following weekend!

{Chic} Cupcakes Part 2

Pink and green on a cupcake? I love it! These are my 2 favorite colors together. These cupcakes were made for the same customer that wanted the girly cherry blossom cupcakes. It was a lot of fun to make these as well. I am really getting around with this marshmallow fondant. I love working with it and it is like eating candy when you eat it.

Here is the view from above

I think it is time to really get serious and try some challenging designs. What do you think? Got a challenge for me?! Contact me at sweetmemoriescakery@hotmail.com!!

{Chic} Cupcakes Part 1

Happy Monday everyone! Sorry I was MIA last week due to a computer virus that took over my online usage. I am back up and running and trying to catch up where I left off. I want to share with you some cupcake designs I worked on over the weekend.

These cupcakes were requested by a friend for her birthday. She wanted something girly and grown up. So we came up with cherry blossoms and another design. These were made with red velvet cake and vanilla buttercream icing with marshmallow fondant design on top. I love the way they came out and so did she.

Stay tuned for Part 2 of the other half of cupcakes! A completely different design and cake flavor!
Hope you have a great day!!
