{Recipe} Coconut Cupcakes

Coconut cupcakes topped + toasted shredded coconuts = YUMMY! I made these cupcakes for my Mother-in-law just about a month ago. It was kind of hard coming up with a flavor she would like. All she said was "surprise me". Then I remembered that she liked coconuts and she would make coconut pies a lot. Then the light bulb came on and I created  a coconut cupcake recipe and got busy. She LOVED them. I really loved the toasted coconut topping. It really can be enjoyed by itself as a tasty snack :-)

Go ahead and give them a try and tell me what you think.

Ingredients

2 sticks unsalted butter, room temperature
2 cups sugar
4 large eggs at room temperature
1 teaspoon coconut extract
1 teaspoon pure vanilla extract
2 3/4 cups unbleached all purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
1 cup buttermilk or coconut milk (depending on how much coconut flavor you want)

For the frosting:

1 pound cream cheese at room temperature
2 sticks unsalted butter, room temperature
1 teaspoon pure vanilla extract
3  to 4 cups confectioners' sugar, sifted

Coconut Topping:

1 1/2 cup of sweetened shredded coconut

Directions

Preheat oven to 375 degrees. Spread coconut flakes in an even layer on a parchment paper-lined baking sheet. Bake until golden, 5 to 7 minutes; set aside to cool.

Reduce oven temp to 325 degrees.
In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugar on high speed until light and fluffy, about 6 - 8 minutes. With the mixer on low speed, add the eggs, 1 at a time, scraping down the bowl after each addition. Add the vanilla and coconut extracts and mix well.
In a separate bowl, sift together the flour, baking powder, baking soda, and salt. In 3 parts, alternately add the dry ingredients and the buttermilk to the batter, beginning and ending with the dry. Mix until just combined.

Line a muffin pan with paper liners. Fill each liner to the top with batter. Bake for 22 - 28 minutes, until the tops are brown and a toothpick comes out clean. Allow to cool in the pan for 15 minutes. Remove to a baking rack and cool completely.
Meanwhile, make the frosting. In the bowl of an electric mixer fitted with the paddle attachment, on low speed, cream together the cream cheese, butter, and vanilla extract. Add the confectioners' sugar and mix until smooth.

Frost the cupcakes and sprinkle with the toasted coconut.

{Chic} Cupcakes Part 2

Pink and green on a cupcake? I love it! These are my 2 favorite colors together. These cupcakes were made for the same customer that wanted the girly cherry blossom cupcakes. It was a lot of fun to make these as well. I am really getting around with this marshmallow fondant. I love working with it and it is like eating candy when you eat it.

Here is the view from above

I think it is time to really get serious and try some challenging designs. What do you think? Got a challenge for me?! Contact me at sweetmemoriescakery@hotmail.com!!

{Chic} Cupcakes Part 1

Happy Monday everyone! Sorry I was MIA last week due to a computer virus that took over my online usage. I am back up and running and trying to catch up where I left off. I want to share with you some cupcake designs I worked on over the weekend.

These cupcakes were requested by a friend for her birthday. She wanted something girly and grown up. So we came up with cherry blossoms and another design. These were made with red velvet cake and vanilla buttercream icing with marshmallow fondant design on top. I love the way they came out and so did she.

Stay tuned for Part 2 of the other half of cupcakes! A completely different design and cake flavor!
Hope you have a great day!!

Cookies N Cream Cupcakes

If anyone is like me and LOVES all things Cookies N Cream, then they will love these cupcakes!!! Back when I was younger, I would go to Dairy Queen everyday during my lunch break to get an oreo cookie blizzard! Thank goodness for great metabolism during those days! At our mall we have a cookies n cream frappe that I fell in love with and those would take up part of my lunch when I worked across the street from the mall. Recently I found cookies n cream frozen yogurt at Publix, which is only 2 g of fat per half cup! So much better than the regular ice cream at 7-8 grams of fat per half cup.

I made these cupcakes for a get together at a friends house one night. All the firefighters including my husband (EMT- Intermediate now) got together and had dinner and some good laughs. It was only fitting for me to bring some sweets. Cookies n cream cupcakes it was. I made two versions. One with the original oreo cookie and one with the golden oreo cookie. Both were amazing!!!!!

Want a similar recipe?! Find it here on Beantown Baker Blog
Changed entire recipe for me, but I cant share all my secrets :-) I did make the ones from Beantown Baker and they were delish as well!

Fondant Rose Cupcake

This past week has been an EXTREMELY busy one along with this weekend. I am getting back into the swing of things with working full time and trying to keep up with everything. I find myself thinking, "how in the world am I going to keep up?". Exhaustion is kicking in and have not had time to do much. Please bare with me as I am trying to get back into a routine and get things in order. I am sorry for the lack of blog post, but they will pick back up this week!

I did want to share this fondant rose cupcake I did a bit ago. It was my first time attempting the fondant rose. I think it could still use some work. But not too bad, looks pretty cute. You may notice a lot of my cupcakes are CHOCOLATE, it is so my favorite cupcake flavor!

{Cupcakes} Heaven in your mouth!

Chocolate + Coffee + Frosting + Cupcake = HEAVEN IN YOUR MOUTH!

After craving a mocha frappe from starbucks one night, I decided to make a cupcake out of one of my favorite coffee drinks. Here it is. I call it Heaven in your mouth - Mocha frappe cupcake. I have got to say that these cupcakes were absolutely delicious! After I frosted a few I just started eating the rest of the frosting. Literally had to pull myself from it! So not only am I addicted to food, but this frosting as well. The only thing that needs to be added is a chocolate syrup drizzle. Then it really would be PERFECTION.

Yuuummmmmy!! Looks like I will have to make some more and hopefully they will be around long enough for me to share. OR not.........

Hydrangea Cupcakes

Happy Monday to all! Flowers, flowers, flowers. I have always loved hydrangeas! There is something about the colorful, round, pom-pom shaped flower. When they bloom they are just gorgeous. I saw a post on Glorious Treats's blog with a tutorial on how to make hydrangea cupcakes. Before I looked at the tutorial I knew that they were done with a 2D tip and two colors of icing. Also knew that I had to try it out.

Not too bad! I like them!

Zebra Cupcakes

There has been a lot of printed animal fabrics going around this year in the fashion world. Zebra print has always been a favorite of mine. A while ago my friend told me she bought some cute shoes from Khol's and they were zebra print with hot pink stitching. I was about to go crazy and had to go find me a pair.

And of course, my size was SOLD OUT!! Such a bummer. So I decided to use them for inspiration for my next love- baking.

Fourth Of July Cupcakes and a printable

I decided to make some Fourth Of July cupcakes and use my printable cupcake toppers/tags on them. I just used a simple vanilla cupcake with white buttercream frosting. Added a few sprinkles and VOILA, they came out really cute.

Since the 4th is falling on a Sunday this year, our town is doing a lot of the celebrating on Saturday. I am excited to take my daughter to see the fireworks this year. I didn't take her last year, because I wasn't sure how she would react with her being smaller. Food is another part that I am excited about. I love all the grilling and cooking that comes along with any holiday. So I am sure I will need the gym ASAP when its all over.

Here are the Fourth of July tags I created just because and you can use them too. Just cut along the column and use a 2 inch hole punch to cut them out. They can be used for cupcakes, napkin rings, favor tags, wine glass tags, the possibilities are endless. Get creative!

German Chocolate Cupcakes & Red Velvet Mini Cakes

My husband LOVES German chocolate cake. Though we have been married for 4 years, I have never made him a German chocolate cake. One reason was I didn't like coconuts and thought how could I surprise him with something I haven't tasted. Everything has to go through my taste test before being served. Eventually I did come around to liking coconuts and was able to make him something German chocolate. I chose cupcakes and made them for his Father's day treat. They came out wonderful. Super moist cake, chocolate frosting with a center of German chocolate icing/topping.

And along the lines of Father's Day treats. I made these red velvet mini cakes for our dads. Both our dads love red velvet cake. And once again, I didn't always make red velvet cake because I thought cream cheese was gross. My sister was the one that would make it for my dad in the past. I decided to make it this year. The red velvet cake was delish!

I could have just eaten that all day by itself, which I kind of did that anyway. The first batch I made, I decided to be lazy and spray my pans with PAM instead of using my easy off stuff I normally use. BAD IDEA! Things got messy trying to get the cake out the pans. So I just crumbled the cake up and put it in another container to brave another recipe that called for crumbled cake.

Sorry For the poor quality picture, my camera was being silly.

Two Tone Swiss Meringue Buttercream Cupcakes

I loved the way the icing looks on these cupcakes. Sorry for them still being in the pan. I had a pan/carrier combination so they were used to transport the cupcakes as well. These were made for my friend's son. He told me he wanted red and blue icing "mixed together". Of course I couldn't mix it together, you wouldn't see the red and blue anymore! So I split the icing into 2 batches and colored one red and the other blue. It took a while to get the colors right. Swiss Meringue is a little bit different when changing the color. When they were ready, I put one color into one side of the decorating bag and the other color on the other side. That is how you get the 2 tone look. I will post a tutorial in the future on doing this. Can be done with any color and well as more colors.

These cupcakes could easily go for 4th of July cupcakes or Fifa World Cup cupcakes. Just add some white frosting in the bag or some white sprinkles on top maybe.
Stay tuned for the Swiss Meringue Buttercream recipe!!
